I tried one of Clair's Depression Cooking recipes today--The Poor Man's Meal. I knew as soon as I saw this, that my husband would love it because it would remind him of meals he and I have been making for over 25 years.
I cut up red potatoes, and hot dogs, added salt, pepper and some stir fry veggies, and fried them with olive oil Pam in a the cast iron frying pan my late mother-in-law gave us when we were first married.

I am beginning to love this woman. How I wish everyone had a 90 year old grandma who cooked for them and passed on her recipes! We made pot pie with potatoes and some cubes of beef. We also made "mashed potatoe pancakes" with the left over mashed potatoes for breakfast the next day. I loved them. Don't think my kids would touch them.
Oh yeah! We used to have potato pancakes too. They were yummy. I agree--everyone should have a 90 year old grandma who cooks and passes on recipes. I love her stuff!

It really was. It was simple and filling. Real comfort food.
