Coffee Chicken


A forum friend posted this recipe on Facebook and I knew, with dh's love of coffee, that I had to try it!

Coffee Chicken

2-3 pounds chicken
2 TBS instant coffee grains
1 TBS ginger
1-2 TBS olive oil
1 ¼ tsp allspice
½ tsp salt

Blend coffee, ginger, olive oil, allspice, and salt. Coat chicken with blend. Grill, broil, or cook in hot skillet until done inside.

Note: I didn't have allspice in the house, so I substituted, cinnamon, nutmeg, cloves, and pepper in estimated amounts.

I also used 2 boneless, skinless chicken breasts and cooked them in a 350 degree oven for 30 minutes served with rice and Italian green beans.

Very highly recommended!

Sounds like it smelled heavenly. I love your choice of sides too. Tomorrow we are having broiled salmon over raw spinach. Wish you were closer. ; )

I love your salmon over raw spinach! I have both ingredients in the house currently and will probably be doing that soon.

It was delicious. I'm going to try another one soon where you marinate the meat in strong coffee. Dh is sure to love that one!
